Avocado Arugula Salad with Goat Cheese

  • 2 ripe avocados
  • A handful of arugula
  • 100 g goat cheese
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • Salt and pepper to taste


  1. Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon. Dice the avocado.
  2. Wash the arugula and pat it dry.
  3. Cut the goat cheese into small pieces.
  4. In a bowl, mix together the olive oil and lemon juice. Season with salt and pepper.
  5. Add the diced avocado, arugula, and goat cheese to the bowl and gently toss to combine, being careful not to mash the avocado too much.
  6. Arrange the salad on plates and serve.

Optional: You can garnish the salad with toasted pine nuts or chopped walnuts for an additional crunch. Enjoy your meal!
