Ingredients:
- 2 ripe avocados
- A handful of arugula
- 100 g goat cheese
- 2 tablespoons olive oil
- Juice of half a lemon
- Salt and pepper to taste
Instructions:
- Cut the avocados in half, remove the pit, and scoop out the flesh with a spoon. Dice the avocado.
- Wash the arugula and pat it dry.
- Cut the goat cheese into small pieces.
- In a bowl, mix together the olive oil and lemon juice. Season with salt and pepper.
- Add the diced avocado, arugula, and goat cheese to the bowl and gently toss to combine, being careful not to mash the avocado too much.
- Arrange the salad on plates and serve.
